Burmese Rice

- 3 cops of cooked white rice (your favorite method) shopping list
- 1 cup of flaked coconut shopping list
- 8 ounces of sliced fresh mushrooms shopping list
- 1/4 cup of butter shopping list
- 1 cup of raisins shopping list
- 1 medium onion, thinly sliced shopping list
- 6 oz of blanched almonds shopping list
- 2 egg yolks, hard cooked (put the extra whites in your tuna fish) shopping list
How to make it
- Fix rice per package instructions cool and reserve.
- I usually cook my rice with chicken stock and generous amounts of pepper.
- Combine rice and coconut.
- Saute mushrooms in butter until they release their liquid.
- Add raisins and cook until they puff.
- Add sliced onions and cook until tender.
- Push to one side in skillet, add almonds and brown.
- Blend with rice mixture.
- Sprinkle top with chopped egg yolks.
- Add chopped parsley if desired.
