Mexican stuffed peppers

- ancho peppers (or pepper of choice) 4-6 shopping list
- 2 lbs ground chicken/turkey/beef/pork or any combo of these shopping list
- garlic powder or fresh garlic to your liking (2 tsp) shopping list
- 1/2 chopped small yellow onion shopping list
- herbs (whatever you have handy) to your liking shopping list
- 1 tsp chili powder or even smoked paprika shopping list
- 1 tsp cumin (I like the smokey flavor) shopping list
- cooked rice (I like brown rice) about 1 c cooked (optional) shopping list
- 1 can fire roasted tomatoes with adobe sauce (divided) shopping list
- 1/4 red wine (optional) shopping list
- sourcream (optional) shopping list
How to make it
- Combine the chicken (or meat of choice) with herbs, spices and rice, and 1/4 can of fire roasted tomatoes with adobe sauce
- mix well
- mix remaining tomatoes and wine
- stuff the peppers
- With extra meat ingredients (if any) shape into balls and place all of this into a pyrex or casserole dish
- Pour remaining roasted tomato/wine mixture over the top
- bake covered at 375 for approximately 45 - 60 minutes depending on the size of filled chilis and meatballs
- remove stuffed chilis and meatballs and combine the sauce with sour cream to make a tangy rich sauce or just top the peppers with sour cream
- serve with favorite salad, tortillas and butter
