How to make it

  • Combine the chicken (or meat of choice) with herbs, spices and rice, and 1/4 can of fire roasted tomatoes with adobe sauce
  • mix well
  • mix remaining tomatoes and wine
  • stuff the peppers
  • With extra meat ingredients (if any) shape into balls and place all of this into a pyrex or casserole dish
  • Pour remaining roasted tomato/wine mixture over the top
  • bake covered at 375 for approximately 45 - 60 minutes depending on the size of filled chilis and meatballs
  • remove stuffed chilis and meatballs and combine the sauce with sour cream to make a tangy rich sauce or just top the peppers with sour cream
  • serve with favorite salad, tortillas and butter

    We are huge stuffed pepper fans and this is a very different way to make them. Will give these a try this weekend. Great post and a high 5.
