APPLESAUCE GINGERBREAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boone Estate in Midlothian, Texas in 1992.

Ingredients
  • 1-1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup brown sugar
  • 3/4 teaspoon baking soda
  • 1/2 cup molasses
  • 3/4 cup boiling water
  • 2 egg whites lightly beaten
  • 3/4 cup raisins

Directions
  1. Preheat oven to 325 then lightly grease and flour a square baking pan.
  2. Sift together flour, baking powder, spices and salt.
  3. Combine applesauce, brown sugar, 1/2 teaspoon baking soda and molasses.
  4. Mix 1/4 teaspoon baking soda and boiling water.
  5. Alternately add applesauce mixture and boiling water to dry ingredients then stir to combine.
  6. Stir in egg whites and then raisins and mix well then scoop into prepared pan.
  7. Bake 30 minutes then cool completely and serve.
