Balushkies Recipe
Ethnic Polish or Hungarian soul-food. Recipe from KellyO's, Pittsburgh, PA, as told on Diners Drive-ins & Dives 2/16/09. (Edited 3/27/09 to reduce to workable amount for home stoves.) (Edited 4/11/09 to ease prep and lighten.)

Ingredients
  • 6 slices thin-sliced Bacon, cut in 1/4" strips crosswise.
  • 1/2 to 3/4 cup sliced (or chopped) Onion (I use Vidalia-type)
  • 1/4 head of Cabbage, sliced
  • 2 oz. (or more) Butter
  • Garlic Salt, to taste (I like to add a LOT)
  • 2 cups Egg Noodles, cooked per pkg.inst.
  • Grated Parmesan (or Romano) Cheese to top

Directions
  1. Cook the noodles per pkg. instructions, about 10 minutes.
  2. MEANWHILE, in a LARGE frypan (at least 12") :
  3. Fry the bacon until mostly crisp, adding the onion when the bacon partly cooked.
  4. Drain off most of the fat and return to heat.
  5. Add the cabbage and continue to toss & saute.
  6. Add garlic salt to taste.
  7. Add the butter.
  8. Add the cooked and drained noodles; continue to saute & toss or stir.
  9. Top with grated Parmesan cheese to serve.
