Caribbean Confetti Rice Recipe
Colorful, sweet, and chock full of fresh veggies, this rice is sure to be a hit at your next dinner.

Ingredients
  • 5 cups wild rice blend
  • 2.5 cups veggie broth
  • 2 cups water
  • 2 cups frozen peas, thawed
  • 1 cup chopped red bell pepper
  • 2 cups diced red onion
  • 2 cups diced mango
  • 1 cup dry flake coconut
  • 1 can crushed pineapple, drained
  • Salt and pepper to taste

Directions
  1. Bring water and veggie broth to boil in large pot.
  2. Stir in rice, cover, and reduce heat.
  3. Allow to cook until rice is tender and water is absorbed.
  4. Mix in remaining ingredients and season to taste.
  5. Serve warm.
