Andys Prosciutto Scallops Recipe
If you like bacon wrapped scallops you will love these. They are a little more expensive to make but well worth it!

Ingredients
  • 1/4 cup chopped sun-dried or fresh tomatoes
  • 2 tablespoons chopped fresh basil leaves
  • 2 tablespoons chopped pitted black olives
  • 2 tablespoons chopped green onion
  • 1/4 cup extra-virgin olive oil
  • 1/2lb medium sea scallops
  • 1/4 teaspoon seasalt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons Old Bay seasoning
  • 12 slices prosciutto

Directions
  1. Preheat the oven to 350 degrees F.
  2. In a handi chopper, add the tomatoes, basil, olives, green onion and olive oil until finely chopped.
  3. Season both sides of the scallops with salt and pepper and old bay. Top scallop with the tomato mixture.
  4. Fold each slice of prosciutto in half lengthwise, then wrap each scallop in 1 slice of prosciutto.
  5. Place wrapped scallops in a buttered baking dish, seam side down. Bake until scallop is cooked through, about 15 minutes
