Ingredients

1 medium head cabbage, chopped

2 small carrots, grated

1 small onion, thinly sliced

1/2 tsp. crushed red pepper

1/2 tsp. oregano

1 tsp. olive oil

1 tsp. salt

1 tsp. brown sugar

1/4 cup vinegar

1/2 cup water

Directions

Blanch cabbage with boiling water 1 minute

Drain.

Place in mixing bowl, add cabbage and remaining ingredients

Chill at least 3 hours
