Baked Pineapple Tapioca

- 2 cups canned crushed pineapple (packed in juice) drained (reserve juice) shopping list
- 3/4 cup hot water shopping list
- 3 tablespoons sugar shopping list
- 2 tablespoons plus 2 teaspoons quick-cooking tapioca shopping list
- 1/4 teaspoon lemon extract shopping list
- dash ground cinnamon shopping list
How to make it
- Preheat oven to 325 degrees.
- Spray a 1-quart casserole with nonstick cooking spray.
- Add additional water to pineapple juice, if necessary, to equal 1/2 cup.
- Add to prepared casserole, along with remaining ingredients.
- Mix well.
- Let stand 10 minutes.
- Bake, uncovered, 40 minutes, or until tapioca granules are clear.
- Serve warm or cold.
