Ingredients
  • 2 cups canned crushed pineapple (packed in juice) drained (reserve juice)
  • 3/4 cup hot water
  • 3 tablespoons sugar
  • 2 tablespoons plus 2 teaspoons quick-cooking tapioca
  • 1/4 teaspoon lemon extract
  • dash ground cinnamon

Directions
  1. Preheat oven to 325 degrees.
  2. Spray a 1-quart casserole with nonstick cooking spray.
  3. Add additional water to pineapple juice, if necessary, to equal 1/2 cup.
  4. Add to prepared casserole, along with remaining ingredients.
  5. Mix well.
  6. Let stand 10 minutes.
  7. Bake, uncovered, 40 minutes, or until tapioca granules are clear.
  8. Serve warm or cold.
