Ingredients

1/2 c olive oil

1 md yellow onion; chopped

1 tb minced garlic

2 tb fresh chopped parsley

2 ts crushed red pepper flakes

4 c diced canned tomatoes

1 c vodka

1/2 c grated Parmesan cheese

1 qt Half and Half

1 ts salt

1/2 ts white pepper

Directions

Saute onion and garlic in olive oil until tender, about 3 to 5 minutes.

Add tomatoes, red pepper, white pepper, salt and parsley.

Cover and simmer 10 minutes. (note: I puree at this point but that is optional)

Add Parmesan, vodka and Half and Half. Simmer for 20 minutes.
