Ingredients

2 cups zucchini; grated

2 eggs; beaten

2 teaspoons onion powder

1/2 cup potato flakes

2 garlic cloves; minced

1/2 cup Parmesan cheese

1/2 cup Feta cheese; crumbled

Old Bay seasoning; to taste

Directions

Salt zucchini and set aside for about 15 minutes. Squeeze liquid out.

In a medium bowl, combine zucchini, eggs, onion powder, potato flakes, garlic, Parmesan, Feta cheese and Old Bay seasoning.

Mix well and form into 8 patties.

Heat a small amount of oil in a skillet over medium-high heat. Cook each patty for a few minutes on each side until golden.
