This makes about 20 "knots" and should serve about 4 people. The recipe was adapted by my mother and I from the garlic twists we ate at our local Brooklyn pizzeria.

Ingredients
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 pkg yeast
  • 2 garlic cloves; minced
  • vegetable oil; as needed
  • 1/4 cup olive oil
  • 2 garlic cloves; peeled
  • grated Parmesan cheese; as needed

Directions
  1. Mix first 6 ingredients together in a large bowl.
  2. Knead with just enough warm water to form a nice dough.
  3. Form dough into small pretzel shapes or round balls, set aside in a warm place and allow them to rise for about 20 minutes.
  4. Heat vegetable oil in a frying pan and fry a few pieces at a time
  5. until golden.
  6. Drain knots on a paper-towel lined tray and repeat with the
  7. remaining pieces.
  8. In a blender, add 1/4 cup olive oil and 2 garlic cloves and process until smooth. Pour this mixture into a small bowl.
  9. Dip fried knots individually into the oil and garlic mixture and place on serving tray.
  10. Sprinkle with grated Parmesan cheese and serve.
