This is straight out of my mother's kitchen. As there are many variations of this dip, I must note that there is no dill and no fussy extras in this one, just basic and lovely.

Ingredients
  • 2 medium cucumbers
  • 14 oz strained yogurt
  • 2 tablespoons olive oil
  • 4 garlic cloves; minced
  • salt; to taste

Directions
  1. Peel and grate the cucumbers. Squeeze and drain out all the liquid.
  2. Mix the cucumbers with yogurt, olive oil, garlic cloves and a dash or two of salt.
  3. Chill and serve with pita triangles.
  4. Note: If strained yogurt is not available, use regular yogurt that you have strained through a cheesecloth.

"Basic" is what I love in my tzataiki - this sounds perfect...great on pita sandwiches, veggie dip, omelets, so many things!


I love this stuff on souvlaki!
