Rhubarb Muffins

- Sift together: shopping list
- 2 1/2 C flour shopping list
- 1 tsp soda shopping list
- 1 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- In a mixer bowl, combine and beat: shopping list
- 1 1/4 C packed brown sugar shopping list
- 1/2 C vegetable oil shopping list
- 1 egg shopping list
- 2 tsp vanilla shopping list
- 1 C buttermilk shopping list
- Stir in 1 1/2 C peeled and finely diced rhubarb shopping list
- 1/2 C coursely chopped walnuts or pecans shopping list
- Topping: shopping list
- 2 T melted butter shopping list
- 2/3 C sugar shopping list
- 2 tsp cinnamon shopping list
How to make it
- Beat together brown sugar, oil, egg, vanilla, and buttermilk.
- Stir in rhubarb and nuts.
- Add sifted ingredients to the rubarb mixture just enough to blend.
- Spoon into 24 med sized, greased or paperlined muffin cups.
- Mix together topping ingredients.
- spoon evenly over tops of muffins.
- bake at 400 degrees for 20 min
- These can be frozen for up to 3 months
