How to make it

  • Beat together brown sugar, oil, egg, vanilla, and buttermilk.
  • Stir in rhubarb and nuts.
  • Add sifted ingredients to the rubarb mixture just enough to blend.
  • Spoon into 24 med sized, greased or paperlined muffin cups.
  • Mix together topping ingredients.
  • spoon evenly over tops of muffins.
  • bake at 400 degrees for 20 min
  • These can be frozen for up to 3 months

    Just ate the first one out of the oven... It's going to be lucky if there are any left for anyone else!!! YUM!! I changed the recipe slightly to suit my dietary needs, but the results were wonderful! I am sure the original would be exactly as tasty as mine turned out :) Very highly recommended!!
