How to make it

  • To make the sauce, combine all the ingrediants with 3 tablespoons water in a saucepan. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the mixture thickens. Remove from the heat.
  • To make the Bhajis, sift the flour, baking powder, spices and 1 teaspoon of salt into a bowl and make a well in the center. add the comined edd and 3 tabledsoons water, whisking to make a smooth batter. Stir in the coriander (cilantro) and onion.
  • Fill a deep, heavy based saucepan one-third full with oil and heat until a cube of bread dropped into the oil and BROWNS in 15 seconds. Dropp dessert-spoons of the mixture into the oil and cook in batched for about 90 seconds on each side, or until golden. Drain on paper towels.
  • Serve with spicy tomato sauce.
