Onion Bhajis And Spicy Tomato Sauce

- 2-3 red chillies, chopped shopping list
- 1 red capsicum (pepper), diced shopping list
- 15 oz. jar chopped tomatoes shopping list
- 2 garlic cloves, finely chopped shopping list
- 2 tbsp. soft brown sugar shopping list
- 1 1/2 tbsp. cider vinegar shopping list
- ***onions shopping list
- 8.5 tbsp. all purpose flour shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. chilli powder shopping list
- 1/2 tsp. ground turmeric shopping list
- 1 tsp. ground cumin shopping list
- 2 eggs, beaten shopping list
- 2 very large handfuls chopped coriander (cilantro) leaves shopping list
- 4 onions, very thinly sliced shopping list
- oil for deep-frying shopping list
How to make it
- To make the sauce, combine all the ingrediants with 3 tablespoons water in a saucepan. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the mixture thickens. Remove from the heat.
- To make the Bhajis, sift the flour, baking powder, spices and 1 teaspoon of salt into a bowl and make a well in the center. add the comined edd and 3 tabledsoons water, whisking to make a smooth batter. Stir in the coriander (cilantro) and onion.
- Fill a deep, heavy based saucepan one-third full with oil and heat until a cube of bread dropped into the oil and BROWNS in 15 seconds. Dropp dessert-spoons of the mixture into the oil and cook in batched for about 90 seconds on each side, or until golden. Drain on paper towels.
- Serve with spicy tomato sauce.
