  • ***For Spicy Tomato Sauce
  • 2-3 red chillies, chopped
  • 1 red capsicum (pepper), diced
  • 15 oz. jar chopped tomatoes
  • 2 garlic cloves, finely chopped
  • 2 tbsp. soft brown sugar
  • 1 1/2 tbsp. cider vinegar
  • ***Onions
  • 8.5 tbsp. all purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. chilli powder
  • 1/2 tsp. ground turmeric
  • 1 tsp. ground cumin
  • 2 eggs, beaten
  • 2 very large handfuls chopped coriander (cilantro) leaves
  • 4 onions, very thinly sliced
  • Oil for deep-frying

Directions
  1. To make the sauce, combine all the ingrediants with 3 tablespoons water in a saucepan. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the mixture thickens. Remove from the heat.
  2. To make the Bhajis, sift the flour, baking powder, spices and 1 teaspoon of salt into a bowl and make a well in the center. add the comined edd and 3 tabledsoons water, whisking to make a smooth batter. Stir in the coriander (cilantro) and onion.
  3. Fill a deep, heavy based saucepan one-third full with oil and heat until a cube of bread dropped into the oil and BROWNS in 15 seconds. Dropp dessert-spoons of the mixture into the oil and cook in batched for about 90 seconds on each side, or until golden. Drain on paper towels.
  4. Serve with spicy tomato sauce.
