THOUSAND ISLAND CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woods Estate in Canton, Texas in 1988.

Ingredients
  • 16 ounce bottle Thousand Island dressing
  • 2/3 cup apricot preserves
  • 2 envelopes dry onion soup mix
  • 8 boneless skinless chicken breast halves

Directions
  1. Combine dressing, preserves and soup mix.
  2. Place chicken in ungreased baking pan and top with dressing mixture.
  3. Cover and bake at 350 for 20 minutes basting often.
  4. Uncover and bake 20 minutes longer.
  5. Serve juice over rice or cooked egg noodles topped with chicken.
