Ingredients
  • Half a litre of milk
  • 2 egg yolks
  • 50g of flour
  • 80 g of sugar
  • lemon zest
  • vanilla flavour or vanilla pod
  • sponge biscuits (or sponge cake)
  • 'alkermes' liqueur (or vin santo, or other sweet lqueur).

Directions
  1. To prepare the 'crema pasticcera' (custard): mix the egg yolks in a mixing bowl with sugar and vanilla flavouring. Slowly add flour. Add warm milk and mix carefully. Add some lemon zest. Put mixture in a pan on low heat. Continuously stir the custard until 3 minutes after it starts boiling.
  2. Place a layer of sponge biscuits in a bowl. Sprinkle liqueur over biscuits, spread over some custard, place another layer of sponge biscuits and so on. Zuppa Inglese should be topped with custard. Sprinkle with powder sugar or cocoa powder or chopped hazelnuts. Pronto!

True: Zuppa inglese is similar to trifle. But it's not..Inglese! :) It doesn't have milk cream as trifle and utilises confectionery cream (we call it 'crema pasticcera') instead of custard for the layers. The main difference is that custard does not use flour at all, unlike crema pasticcera. The story goes that Zuppa was invented in the 19th century by the Florentine cooks hired by the wealthy English that used to spend time in Florence. A dessert to remind them of home, use some cake left-overs and... plenty of alcohol. So, English-Italian connection explained. Ciao!
