Creamy Pasta Sausage Bake

- 1/2 recipe vegetable sausage pasta Toss, recipe on my page shopping list
- 1 jar (15 oz.) alfredo sauce, or equivalent homemade, about 2 c. shopping list
- 1/2 c. sliced roasted red pepper shopping list
- 3 roma tomatoes, seeded and diced shopping list
- 2 c. shredded mozzarella cheese, divided shopping list
- 1/4 c. grated parmigiano Reggiano cheese shopping list
- *The vegetable sausage pasta Toss includes whole-wheat pasta, italian sausage, asparagus, zucchini, broccoli, mushrooms, onions, garlic, and crushed red pepper flakes shopping list
How to make it
- Preheat oven to 375 degrees F. Spray a 2-quart baking dish with cooking spray.
- Reheat leftover Vegetable Sausage Pasta Toss in microwave 3 - 4 minutes or until heated through. In a large bowl, toss together leftovers, Alfredo sauce, red pepper, tomatoes, and 1 1/2 c. Mozzarella cheese. Pour into prepared baking dish.
- Top with remaining Mozzarella and Parmigiano. Bake, uncovered, for 30 minutes or until bubbly and cheese is just beginning to brown. Serve with garlic bread.
