Creamy Pasta Sausage Bake Recipe

Ingredients

1/2 recipe Vegetable Sausage Pasta Toss, recipe on my page

1 jar (15 oz.) Alfredo sauce, or equivalent homemade, about 2 c.

1/2 c. sliced roasted red pepper

3 Roma tomatoes, seeded and diced

2 c. shredded Mozzarella cheese, divided

1/4 c. grated Parmigiano Reggiano Cheese

*The Vegetable Sausage Pasta Toss includes whole-wheat pasta, Italian sausage, asparagus, zucchini, broccoli, mushrooms, onions, garlic, and crushed red pepper flakes

Directions

Preheat oven to 375 degrees F. Spray a 2-quart baking dish with cooking spray.

Reheat leftover Vegetable Sausage Pasta Toss in microwave 3 - 4 minutes or until heated through. In a large bowl, toss together leftovers, Alfredo sauce, red pepper, tomatoes, and 1 1/2 c. Mozzarella cheese. Pour into prepared baking dish.

Top with remaining Mozzarella and Parmigiano. Bake, uncovered, for 30 minutes or until bubbly and cheese is just beginning to brown. Serve with garlic bread.
