Mini Cream Cheese And Fruit Egg Rolls Recipe

These mini egg rolls are a great way to use up leftover egg roll wraps. The flavors are unlimited.

Ingredients
  • Egg Roll Wraps cut into 1/4s
  • Cream Cheese
  • Fruit cut into bite size pieces
  • Cooking Oil

Directions
  1. Make all up all egg rolls before starting to cook.
  2. Take 1 piece of egg roll, place about 1/2 tsp cream cheese in the center and top with a small piece of fruit.
  3. Roll one corner over the fruit
  4. Dampen 2 side corners with wet fingers and roll inward.
  5. Dampen final corner with wet fingers and bring over center of eggroll
  6. Fry about 1 minute on each side or until golden brown.
  7. Wetting the corners creates a seal on your egg roll

While making egg rolls I found myself with leftover egg roll sheets. I had some cherries and pineapple slices and of course cream cheese so decided to give it a try. These are great. Not very sweet but just perfect. I would think that any fruit would work great... blueberries, strawberry slices, peach slices, etc.


They do sound great!


I have to admit that my egg rolls themselves weren't quite up there. They were good but they only scored a 6 with my food testers so I'm still working on them. But these little treats scored a 10+.
