  • 8 tsp coriander seeds
  • 6 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp fennel seed
  • 4 tsp ground cinnamon
  • 8 tsp peppercorns
  • 1 tsp ground nutmeg
  • 1 tsp whole cloves
  • 2 tsp ground cardamom
  • 2 tsp turmeric
  • 2 tsp ground ginger
  • 1 tsp cayenne (or less if less heat is desired)

Directions
  1. In a small skillet, dry roast the seeds on med-high until half of them have popped. (You may want to cover the pan with a splatter guard)
  2. Add the ground spices and stir for another minute or until fragrant.
  3. Transfer to spice grinder or mortar and grind to a fine powder.
  4. Store in an air-tight jar.
