Madras Curry Powder

- 8 tsp coriander seeds shopping list
- 6 tsp cumin seeds shopping list
- 1 tsp mustard seeds shopping list
- 1 tsp fennel seed shopping list
- 4 tsp ground cinnamon shopping list
- 8 tsp peppercorns shopping list
- 1 tsp ground nutmeg shopping list
- 1 tsp whole cloves shopping list
- 2 tsp ground cardamom shopping list
- 2 tsp turmeric shopping list
- 2 tsp ground ginger shopping list
- 1 tsp cayenne (or less if less heat is desired) shopping list
How to make it
- In a small skillet, dry roast the seeds on med-high until half of them have popped. (You may want to cover the pan with a splatter guard)
- Add the ground spices and stir for another minute or until fragrant.
- Transfer to spice grinder or mortar and grind to a fine powder.
- Store in an air-tight jar.
