These chops are irresistable. Found this recipe when I was looking for easy meat dishes. The mustard coating is a piquant French touch that holds the crusty nut coating in place and ensures a juicy meat.

Ingredients
  • 1 egg white
  • 1 tablespoon Dijon-style mustard
  • 1/2 cupt finely chopped pecans
  • 1/2 cup soft bread crumbs (about 1 1/3 slices bread)
  • 1 clove garlic, finely chopped or grated
  • 6 lamb loin or shoulder chops, about 3/4 inch thick
  • 2 tablespoons vegetable oil
  • 2 tablespoons brandy

Directions
  1. Beat egg white slightly in small bowl; stir in mustard.
  2. Mix pecans, bread crumbs and garlic.
  3. Dip lamp chops into mustard mixture; coat with pecan mixture.
  4. Heat oil in 10 inch skillet until hot. Cook lamb in oil over low heat until deep golden brown, about 10 minutes on each side.
  5. Remove from heat; immediately sprinkle brandy around lamb in skillet and let alcohol evaporate.
