Monday Night Meatloaf Recipe
This is a family favorite (and I HATE meatloaf, but not this one!) There are NEVER any left overs and my boys always ask for it for their birthday dinner.

Ingredients
  • 1 1/2 lbs. ground beef (20% fat)
  • 1/2 lb. ground pork (I use ground sausage)
  • 2 eggs
  • 1/2 C milk
  • 1 tsp. onion powder
  • 1/2 tsp celery salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 1 tsp. ground mustard
  • 1 Tbsp worcestershire sauce
  • 1/4 tsp dried thyme,crumbled
  • 1/4 tsp rubbed sage
  • 1 tsp salt
  • 2 medium carrots shredded fine (or process in food processor until they resemble bread crumbs)
  • 1 cup dried bread crumbs (plain or Italian)
  • Sauce:
  • 1/2 C catsup
  • 2 Tbsp honey
  • 1 Tbsp dijon mustard
  • Pinch cayenne pepper

Directions
  1. Crumble beef and pork in large mixing bowl and set aside.
  2. In small mixing bowl, combine next 11 ingredients and mix well with a fork so the eggs and milk are thoroughly combined with the spices.
  3. Add egg mixture to the meat and mix (I use my hands)
  4. Add the breadcrumbs and carrots and combine all ingredients thorougly.
  5. Once combined, shape it into a loaf and place in a 9 x 13 inch shallow baking pan. Do not let the meat touch the sides of the pan (this will allow the meatloaf to brown on all sides and let the fat drain)
  6. Bake at 350 degrees for 60 minutes or until cooked through (165 degrees)
  7. While meatloaf is cooking, combine ingredients for sauce. During last 15 minutes of cooking, top the meatloaf with the sauce.
  8. Let rest for 10 minutes before slicing.

I've never met a meatloaf I didn't like! It's my favorite meal, simple as it may be. I usually just throw what I think sounds good that night into a bowl to make it, although I've tried many recipes, too. This one looks fabulous. I like the sausage, spices, and carrots in this, and the sauce looks really delicious. I will print this one to try, hopefully sometime soon. Thanks for sharing! - Natalie

I only like meat loaf if it's got some flavor to it and it's juicy. This one looks really good, but I will probably use Panko instead of breadcrumbs. Thanks and a High 5...
