Ingredients
  • 1 1/2 lbs. of fresh shrimp, peeled
  • 1 cup chopped onions
  • 1 cup chopped green peppers
  • 1 cup of chopped celery
  • 2 cloves of minced garlic
  • 4 tbsp of butter
  • 2 tbsp of oil
  • 3 cups of your favorite marinara sauce
  • 1/4 to 1/3 cup of white wine
  • 1/2 tsp of dried basil leaves
  • 1 tbsp of parsley
  • 1 tsp of Chef Paul Prudhomme's "Seafood Magic"
  • 4 cups of brown rice cooked
  • garnish with

Directions
  1. In a large saute pan or frying pan, melt butter with oil.
  2. Stir fry the onions, peppers, celery until tender but still nearly crisp.
  3. Add the peeled shrimp and garlic.
  4. Cook until not quite pink.
  5. Add sauce and seasonings.
  6. Cover and cook 4 minutes.
  7. Serve over rice
  8. Sprinkle with lemon zest, parsley for color and a "fresh lemon burst"
