How to make it

  • Preheat oven to 350 degrees.
  • After rinsing and patting the chicken dry - rub the outside with the extra clove of garlic all over.
  • Insert the five cloves of garlic among the rosemary and sage and lemon halves into the cavity of the chicken. Tie the legs together to keep these inside the chicken.
  • Salt and pepper the skin of the chicken.
  • Place on a roasting rack in a roasting pan.
  • Roast 20 minutes per pound.
  • Remove from the oven and cover with foil for about five minutes before cutting the chicken up to rest.

    You've been holding out on me...love the rosemary in here. Unfortunately, I do not have a garden like Conner has, so I will have to look for some fresh rosemary and sage in the produce dept. I have a roaster in the freezer for this weekend - sounds like a match made in heaven to me.

    I've got the sage and rosemary in my yard, and I always have garlic, so there's nothin' stopping me! good recipe.
