Rosemary - Sage Roasted Chicken Recipe
This is my favorite roasted chicken. The rosemary is incredibly aromatic while it's in the oven and the rest of the flavors make it subtle rather than harsh and delicious.

Ingredients
  • 1 large roasting chicken
  • 2 bunches of rosemary
  • 2 bunches of sage
  • 5 garlic cloves, peeled
  • 1 large lemon, cut in half
  • salt freshly ground pepper
  • 1 extra garlic clove

Directions
  1. Preheat oven to 350 degrees.
  2. After rinsing and patting the chicken dry - rub the outside with the extra clove of garlic all over.
  3. Insert the five cloves of garlic among the rosemary and sage and lemon halves into the cavity of the chicken. Tie the legs together to keep these inside the chicken.
  4. Salt and pepper the skin of the chicken.
  5. Place on a roasting rack in a roasting pan.
  6. Roast 20 minutes per pound.
  7. Remove from the oven and cover with foil for about five minutes before cutting the chicken up to rest.

I've got the sage and rosemary in my yard, and I always have garlic, so there's nothin' stopping me! good recipe.

You've been holding out on me...love the rosemary in here. Unfortunately, I do not have a garden like Conner has, so I will have to look for some fresh rosemary and sage in the produce dept. I have a roaster in the freezer for this weekend - sounds like a match made in heaven to me.
