Chocolate Orange Cake

- 2tsp plus 1/3c baking cocoa,divided shopping list
- 1/3c quick-cooking oats shopping list
- 2/3c reduced-fat sour cream shopping list
- 1/3c sugar blend shopping list
- 2 eggs shopping list
- 3Tbs triple sec or orange juice shopping list
- 2Tbs butter,melted shopping list
- 5tsp canola oil shopping list
- 1tsp vanila extract shopping list
- 2/3c flour shopping list
- 1tsp baking powder shopping list
- 1/2tsp baking soda shopping list
- 1/4tsp salt shopping list
- 1/4c mini sem-sweet chocolate chips shopping list
- 2tsp grated orange peel shopping list
- Frosting: shopping list
- 4oz. reduced-fat cream cheese shopping list
- 1/4c confectioners sugar shopping list
- 2tsp grated orange peel shopping list
- 2tsp orange juice shopping list
How to make it
- Coat an 8" square baking dish with cooking spray and sprinkle with 2 tsp. cocoa;set aside. Place oats in a small food processor;cover and process till ground. Set aside
- In a large bowl,beat the sour cream,sugar blend,eggs,Triple Sec,butter,oil and vanilla until well blended. Combine the flour,baking powder,baking soda,salt and remaining cocoa;gradually beat into sour cream mixture until blended. Stir in chocolate chips and orange peel.
- Transfer to reserved dish. Bake at 350 for 20-25 mins. or till toothpick comes out clean. Cool completely on wire rack.
- Frosting: In a small bowl,beat cream cheese until fluffy. Add confectioners sugar,orange peel and juice;beat until smooth. Frost top of cake.
