This recipe makes four generous loaves. It is delicious, HEALTHY, and freezes well. In fact, it slices better if frozen overnight.

Ingredients
  • 3 cups white or unbleached best-for-bread flour
  • 1 1/2 cups whole wheat flour
  • 1 cup dark rye flour
  • 1 cup ground, roasted sunflower seeds
  • 1/4 cup ground, roasted pistachio nuts
  • 3/4 cup sesame seeds (for coating unbaked loaves)
  • 1/2 cup poppy seeds (for coating unbaked loaves)
  • 1 tbsp salt (considering this makes 4 loaves, the amount of salt is negligible)
  • 1/4 cup white sugar
  • 1 pkg traditional bakers' yeast + i tsp sugar to activate
  • 1/2 cup warm water (for yeast)
  • 4 large eggs
  • 1/2 cup canola oil
  • 1 1/2 cups water
  • 1 cup buttermilk

Directions
  1. Prepare yeast in the 1/2 cup warm water with 1 tsp white sugar.
  2. mix ALL dry ingredients
  3. after yeast has worked,add it to the dry ingredients. Mix well.
  4. add the water --- Mix well.
  5. add the eggs --- Mix well.
  6. add buttermilk --- Mix well.
  7. add oil --- Mix well.
  8. allow dough to rest for 10 minutes, then:
  9. KNEAD well for at least 10 minutes, or until the dough is shiny, smooth, and blistered.
  10. Because this is a more dense dough, it requires thorough kneading to allow for proper proofing
  11. proof in warm place until doubled in bulk.
  12. punch dough down,
  13. knead again a few minutes, then:
  14. for the four loaves.
  15. place loaves in greased and floured loaf pans.
  16. allow to proof again until doubled in :bulk, then
  17. Brush liberally with melted creamery butter
  18. Sprinkle with the sesame and poppy seeds
  19. Bake at 350*F for the first 20 min, then:
  20. INCREASE HEAT to 375*F to finish...
  21. Bake until the loaves are golden brown, and they sound hollow when tapped with the fingers.
  22. Remove immediately from the pans and cool on wire rack, turning often to prevent shaping deformities.
  23. This bread is wonderful for eating 'as is', or for making delicious sandwiches.
