Ingredients
  • 8 ounces angel hair pasta
  • 2 pounds tomatoes
  • 4 cloves garlic, crushed
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • 1/4 cup Parmesan cheese, grated

Directions
  1. Place tomatoes in kettle and cover with cold water.
  2. Bring just to a boil.
  3. Pour off water and cover again with cold water.
  4. Peel tomatoes and cut into small pieces.
  5. Cook pasta in a large pot of boiling salted water until al dente.
  6. Saute the garlic in enough oil to cover the bottom of a skillet.
  7. When garlic becomes opaque, stir in tomato paste.
  8. Immediately stir in the tomatoes, salt and pepper.
  9. Reduce heat and simmer until the pasta is ready.
  10. Add basil.
  11. Drain pasta but do not rinse.
  12. Toss with a couple tablespoons olive oil and then mix with sauce.
  13. Reduce heat as low as possible.
  14. Keep warm, uncovered for about 10 minutes at which time it is ready to serve.
  15. Garnish generously with freshly grated Parmesan cheese.
