How to make it

  • Preheat oven to 325 then toast pine nuts on baking sheet until golden brown and fragrant.
  • Cool completely then bring large pot of salted water to boil over high heat.
  • Add broccoli and cook 3 minutes then transfer with tongs to sieve and drain well.
  • Reserve boiling water for cooking the pasta.
  • Cut broccoli into large chunks and place in food processor with basil and garlic.
  • Process until finely chopped stopping to scrape down sides of bowl once or twice.
  • With motor running add olive oil and cream through feed tube processing until nearly smooth.
  • Add pine nuts and process again until they are finely chopped.
  • Transfer mixture to bowl and stir in cheese, salt and pepper.
  • Add pasta to same boiling water used to cook broccoli then cook until al dente.
  • Just before pasta is done remove 1 cup of the boiling water.
  • Whisk enough water into broccoli mixture to make sauce that will coat pasta nicely.
  • Drain pasta and return to pot then add sauce and toss well and serve on warm plates.
