How to make it

  • Prep avocado salsa up to 4 hours in advance (will save overnight, but I wouldn't push it!).
  • Mix the finely chopped red onion with the lime juice. Gently fold in the avocado. Season with salt and pepper.
  • Mix cayenne, salt, and pepper together in a small dish.
  • Trim fat and prep chicken breast as desired - I like thin filets so I usually slice them in half.
  • Rub spice mixture on both sides of chicken breasts.
  • Heat olive oil over medium heat in a saute pan.
  • Cook chicken until done, 8-10 minutes depending on thickness. If you have to cook the chicken in batches, save the first batch under tented tin foil - it keeps the chicken extra juicy!
  • Serve chicken with a generous portion of avocado salsa on top.
