Spicy Black Bean Soup Recipe

Ingredients

1 T. olive oil

2/3 c onion chopped

1T cumin

3 15 oz black beans, slightly drained

1 15 oz. can vegetable ( or chicken ) broth

3 c medium chunky salsa

juice and zest of 1 lime

1/4 c cilantro, chopped

sour cream, optional to top

Directions

1. Cook the oil and onion

2, Add other ingredients to the pot and bring to a boil. Reduce and simmer about 30 minutes, until you can't resist it any more.

3. Put in a bowl and top with a little sour cream.

4. I like to dip warm whole wheat tortillas in to this soup.
