How to make it

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare a 9" springform pan with butter.
  • Combine crushed cookies, butter, 2 tablespoons sugar and cocoa in a small bowl.
  • Mix well and press onto bottom of springform pan.
  • Place cream cheese in large bowl and beat with electric mixer on low speed until smooth.
  • While beating slowly add 1 cup sugar and then eggs, individually.
  • Continue beating until smooth.
  • Combine the chocolate chips and heavy cream in microwave safe bowl.
  • Heat in the microwave until chocolate is completely melted, stirring every 30 seconds.
  • Beat chocolate into cream cheese mixture.
  • Add the sour cream, salt, beer and vanilla.
  • Blend until smooth.
  • Pour mixture into crust.
  • Place pan in a large deep baking dish and fill with water halfway up side pf springform pan.
  • Bake cheesecake in water bath for 45 minutes.
  • Turn oven off BUT do not remove cheesecake.
  • Set the oven door ajar slightly and let cheesecake remain another 45 minutes.
  • Remove from oven.
  • Cool on rack for 10 minutes and then remove ring from pan.
  • Chill at least 4 hours.
  • CLOVER:
  • Melt the semisweet chocolate in small bowl in microwave.
  • Make clovers by dropping 3 small drops of melted chocolate close to one another on waxed paper.
  • Drag a toothpick from dots to make the stem.
  • Chill until hardened.
  • Arrange clovers on top on chilled cheesecake.
  • **I would probably use the green mint chips for a bit more contrast!
