Easy Potato Pancakes Recipe
Here is a super easy recipe for potato pancakes. My kids love them plain, but for a little zip you can add minced or chopped onion. Serve with soure cream and/or applesauce. A great Lenten recipe!

Ingredients
  • 3 cups frozen shredded hash brown potatoes
  • 2 Tablespoons flour
  • 2 eggs, beaten
  • 3 Tablespoons butter, melted
  • 1 1/2 teaspoons water
  • 1/2 teaspoon salt
  • 1 - 2 Tablespoons vegetable oil

Directions
  1. Place hash browns in a strainer and rinse with cold water until thawed.
  2. Drain thoroughly and transfer to a large bowl.
  3. Add the flour, eggs, buter, water and salt. Mix well.
  4. Heat oil in a large skillet or electric fry pan to medium heat.
  5. Drop batter by 1/3 cupfuls into oil; fry until golden brown on both sides.
  6. Drain on paper towels. Enjoy!

Love potato pancakes! I always make mine with shredded hashbrowns too. Yummy!


I have never tried anything except the left over mash potatoes. So I am going to buy some hashbrowns.
