How to make it

  • In a large skillet add oil and quickly fry the sausage at medium high heat for 6 to 7 minutes until sausage begins to brown
  • Add onion and continue to cook and stir for 3-4 minutes more until onion begins to soften.
  • Transfer contents of pan into the slow cooker and use the beef stock to deglaze the pan.
  • Add all remaining ingredients to the skillet, except the parsley. Cook on the high 20 minutes..
  • Remove from heat and stir through the parsley.
  • Taste before you add any salt or pepper.
  • Serve in chunky earthenware bowls topped with buttered fried bread crumbs or with fresh French bread.

    I made this today but the directions sure are confusing. Nothing is "baked" here and I'm not certain why the sausage and onions get transferred to a slow cooker. After 18 minutes on high everything was starting to stick to the pan so I took it off the heat. The beans were mushy. I would never cook this on high for 18 minutes again. Still - the flavor was good. I think the garlic sausage had a lot to do with it. I added a picture. 2/3/13 See more in IMI
