I love making a tasty and satisfying meal from a can of beans and some basic ingredients. I think the origin of this recipe is French Canadian. It is nice on a cold day!

Ingredients
  • 1 - 750 ml can cannellini beans, drained
  • 350 g country garlic sausage or your favourite kiebassa, cubed
  • 2 c beef stock
  • 1 onion, sliced
  • 5 cloves garlic, minced
  • 2 carrots, peeled and cubed
  • 1 large can chopped tomatoes in juice
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 teaspoon herbes de Provence
  • 1/2 cup fresh parsley
  • 1 tsp vegetable oil

Directions
  1. In a large skillet add oil and quickly fry the sausage at medium high heat for 6 to 7 minutes until sausage begins to brown
  2. Add onion and continue to cook and stir for 3-4 minutes more until onion begins to soften.
  3. Transfer contents of pan into the slow cooker and use the beef stock to deglaze the pan.
  4. Add all remaining ingredients to the skillet, except the parsley. Cook on the high 20 minutes..
  5. Remove from heat and stir through the parsley.
  6. Taste before you add any salt or pepper.
  7. Serve in chunky earthenware bowls topped with buttered fried bread crumbs or with fresh French bread.
