Chicken Corn Fritters with Green Chili Sauce

- 1-15 oz. can corn, drained shopping list
- 1 cup cooked chicken, finely chopped shopping list
- 1 egg, lightly beaten shopping list
- 1/2 cup milk shopping list
- 2 tbls. butter, melted shopping list
- salt and pepper to taste shopping list
- 1-3/4 cups flour shopping list
- 1 tsp. baking powder shopping list
- oil to fry shopping list
- green chili Sauce shopping list
- 1/3 cup butter shopping list
- 1/4 cup flour shopping list
- 1/4 tsp. salt shopping list
- 1/8 tsp. pepper shopping list
- 1/8 tsp. garlic powder shopping list
- 1/8 tsp. cumin shopping list
- 1-4 oz. can green chilies shopping list
- 1 cup milk shopping list
- cheddar cheese to garnish shopping list
How to make it
- Fritters
- Bring oil to 375 temp. in deep fryer or skillet
- But corn in mixing bowl and lightly crush with potato masher
- Stir in chicken, egg, milk salt and pepper.
- In another mixing bowl, mix flour and baking powder together
- Stir into corn mixture until just combined
- Drop batter by 1/4 cupfuls into oil
- Fry 3 minutes on each side
- Drain on paper towels
- Green Chili Sauce
- Melt butter in saucepan over med-low heat
- Stir in flour and spices until smooth
- Add chilies
- Add milk gradually, while stirring
- Bring to boil and cook until thickened, constantly stirring
- Sprinkle cheese over fritters and serve with sauce on side
