Ingredients

Beef tenderloin

Potatoes (mashed with half & half and butter)

Crimini mushrooms

Onions ( grilled in butter )

Sour cream

Bauer Butterkase cheese

Half & Half

Butter

Cabernet Sauvignon

Cornstarch ( as a thickening agent )

2 beef boullion cubes

Directions

Directions:

Cut tenderloin into 1” steaks season with salt & pepper (fresh ground) grill medium rare ***no more!

Sautee onions until clear, place to the side

In the same pan place 2tbs butter 5oz Cabernet Sauvignon over medium heat bring to boil and reduce by half, combine 2tbs cornstarch and ½c water with boullion cubes stir into wine and butter reduction return to boil add sliced Crimini mushrooms and cook for 1-2 minutes on very low heat

Presentation:

Place a serving of mashed potatoes in the center of a plate, put tenderloin on top, place small amount of grilled onions, and cover with thin slice of Butterkase cheese, ladle red wine mushroom sauce over the top, add a healthy dollop of sour cream, garnish with fresh chives and serve.
