How to make it

  • Directions:
  • Cut tenderloin into 1” steaks season with salt & pepper (fresh ground) grill medium rare ***no more!
  • Sautee onions until clear, place to the side
  • In the same pan place 2tbs butter 5oz Cabernet Sauvignon over medium heat bring to boil and reduce by half, combine 2tbs cornstarch and ½c water with boullion cubes stir into wine and butter reduction return to boil add sliced Crimini mushrooms and cook for 1-2 minutes on very low heat
  • Presentation:
  • Place a serving of mashed potatoes in the center of a plate, put tenderloin on top, place small amount of grilled onions, and cover with thin slice of Butterkase cheese, ladle red wine mushroom sauce over the top, add a healthy dollop of sour cream, garnish with fresh chives and serve.
