Ingredients
  • 1 cup milk
  • 3 eggs
  • 1 1/2 Tsp. Salt
  • 1/4 tsp. pepper
  • 2 Tablespoons Butter
  • 1 cup Cubed colby or pepper Jack cheese
  • 1/2 cup diced green and red pepper
  • 1 onion Quartered
  • 4 medium potatoes cubed{to fit into Blender}peeled}

Directions
  1. Combine all ingredients in Blender (IN ORDER LISTED}
  2. Cover and blend on high speed[ JUST UNTILLTHE POTATOES GO THROUGH THE BLADE}
  3. DO NOT OVER BLEND.
  4. Pour into lightly greased casserole dish
  5. Bake uncovered 1 hour @350 degrees
