How to make it

  • Prepare lentils and edamame according to packaging's directios.
  • Meanwhile, cook ground chicken in a deep heavy skillet until done. Transfer chicken to a bowl or plate and set aside.
  • In same skillet, add oil and heat over medium-high heat. Add onion, garlic, and chili and saute 2-3 minutes.
  • Add tomatoes, chicken, fish sauce, soy sauce, and sugar. Saute another 2-3 minutes or until onion is translucent and ingredients are well combined.
  • Gently stir in lentils, edamame, and lemon juice. Sprinkle with basil and mint. Heat 2-3 minutes or until heated through and serve with extra lemon wedges for garnish.

    Pad kee mao (the Thai noodle dish from which I drew inspiration) translates to Drunkard's Noodles. Thus, drunkard's lentils.

    And no worries. People are just as allowed to find this un-likable as they are awesome!

    For the record, I did not rate this dish a 3. I rated it a 5. I do not understand why anyone would rate something under a 5. It is better to simply not rate at all. I am sorry that someone evil has done this to such a wonderful recipe.
