Drunkards Lentils

- 1/2 lb ground chicken shopping list
- 1 cup dried lentils shopping list
- 3/4 cup edamame, shelled shopping list
- 2 tablespoons olive oil shopping list
- 1 1/2 cups red onion, minced shopping list
- 5 garlic cloves, minced shopping list
- 1 can diced tomatoes, undrained shopping list
- 2 tablespoons lemon juice shopping list
- 3 tablespoons chopped fresh basil shopping list
- 1 tablespoon chopped fresh mint shopping list
- 1-3 hot red chiles, minced shopping list
- 1 tablespoon fish sauce shopping list
- 1 tablespoon soy sauce shopping list
- 1/2 teaspoon sugar shopping list
- lemon wedges for garnish shopping list
How to make it
- Prepare lentils and edamame according to packaging's directios.
- Meanwhile, cook ground chicken in a deep heavy skillet until done. Transfer chicken to a bowl or plate and set aside.
- In same skillet, add oil and heat over medium-high heat. Add onion, garlic, and chili and saute 2-3 minutes.
- Add tomatoes, chicken, fish sauce, soy sauce, and sugar. Saute another 2-3 minutes or until onion is translucent and ingredients are well combined.
- Gently stir in lentils, edamame, and lemon juice. Sprinkle with basil and mint. Heat 2-3 minutes or until heated through and serve with extra lemon wedges for garnish.

For the record, I did not rate this dish a 3. I rated it a 5. I do not understand why anyone would rate something under a 5. It is better to simply not rate at all. I am sorry that someone evil has done this to such a wonderful recipe.
