Crispy Creamed Spinach Recipe
A variation of our usual creamed spinach recipe...decided to crush some croutons and bake them on top and it was quite nice.

Ingredients
  • 2 - 10 ounce packages of chopped frozen spinach
  • 2 - 3 ounce pkg. cream cheese
  • 1/2 cup of butter
  • 1/2 tsp of salt
  • 1/4 tsp of white pepper
  • grated rind of one lemon
  • 1/4 tsp of nutmeg (or mace)
  • 1 1/4 cup or so of crushed garlic parmesan croutons (coarsely)

Directions
  1. Defrost spinach and squeeze dry.
  2. Add to softened cream cheese and one half of the melted butter.
  3. Season with salt, pepper, lemon rind and nutmeg.
  4. Put in a greased 1 1/2 quart casserole.
  5. Sprinkle the croutons on top.
  6. Drizzle with remaining butter.
  7. (can sprinkle with some grated parmesan cheese if you have it)
  8. Bake at 375 degree for 25 minutes until hot and bubbly.

I love spinach, and your addition of crushed croutons on top, puts this recipe over the top!
