Easter MINT BLOSSOMS cookies

these look so cute and good for Easter..... so I thought I would post ... the recipe and photo are coutesy of Land o' Lakes
Ingredients
- 1 1/4 cups sugar shopping list
- 3/4 cup LAND O LAKES® butter, softened shopping list
- 1 egg shopping list
- 1 teaspoon vanilla shopping list
- 1 3/4 cups all-purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 48 mint meltaway candies shopping list
How to make it
- Combine 1 cup sugar, butter, egg and vanilla in large bowl. Beat at medium speed until well mixed. Reduce speed to low; add flour, baking soda and salt. Beat until well mixed. Cover; refrigerate until firm (30 minutes).
- Heat oven to 375°F. Shape dough into 1-inch balls; roll in remaining sugar. Place 2 inches apart onto ungreased cookie sheets.
- Bake for 7 to 9 minutes or until very light golden brown. Remove from oven; immediately press 1 mint candy in center of each cookie. Remove from cookie sheets; cool completely
