Ingredients
  • 2 cups sugar
  • 4 Tbsp. butter (room Temperature)
  • 2 eggs
  • 1 (20 oz) can crushed pineapple
  • 1 tsp. soda
  • 1 tsp. pure vanilla
  • 1/2 cup chopped pecans
  • 2 cups unsifted flour
  • -------------------Frosting------------------
  • 1 (8 oz ) package cream cheese (softened
  • 8 Tbsp. butter (room temperature)
  • 1 tsp. pure vanilla
  • 2 1/2 cups powdered sugar
  • 2/3 cup chopped pecans.

Directions
  1. Preheat oven to 350 degrees
  2. In a mixer bowl beat the sugar and butter until fluffy.
  3. Add the 2 eggs one at a time.
  4. Add the pineapple and all the juice.
  5. Add the flour and the soda. and mix well.
  6. Add the 1/2 cup chopped nuts.
  7. Pour into a greased and lightly floured 9x13 glass baking dish.
  8. Bake for 45-55 minutes (Toothpick test for doneness).
  9. Mix all ingredients for the frosting together.
  10. Make sure the cake is completely cool before frosting it.
  11. Enjoy!
