Strawberry Bread Recipe

Ingredients

3 cups all-purpose flour

2 cups sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

1 1/4 cups oil

4 eggs

1 teaspoon vanilla extract

1 teaspoon strawberry extract

2 1/2 cups fresh or frozen strawberries-chopped(if using frozen, thaw first)

Glaze:

1 cup powdered sugar

2 tablespoons milk

1 teaspoon strawberry extract

Directions

In a large mixing bowl, sift together flour, baking powder, baking soda,salt, and cinnamon. Add sugar and stir to combine.

Make a well in center.

Combine oil, extracts, eggs,and strawberries. Add to dry ingredients and stir until well mixed.

Pour batter into two well greased 9" x 5" loaf pans and bake in a preheated 350 degree oven for 45 minutes or until loaves test done.

Cool 10 minutes in pans then turn out onto wire rack.

Glaze:

Combine ingredients and stir until smooth. Pour over warm loaves.

Serve warm or cooled.

Suggestions:

Nut lovers may add 1 cup chopped pecans or walnuts to batter before baking.

Substitute 1 cup strawberries for two medium mashed ripe bananas for strawberry banana bread.
