Raspberry Mega Scones

- SCONE: shopping list
- 4 cups whole wheat pastry flour OR unbleached all-purpose flour shopping list
- 3 tablespoons aluminum-free baking powder shopping list
- 1 teaspoon fine grain sea salt shopping list
- 1 stick unsalted butter chilled and in 1/4" cube shopping list
- 3/4 cup fine grain natural cane sugar OR granulated sugar shopping list
- 1 1/4 cups half and half OR cream OR whole milk shopping list
- 1 teaspoon vanilla extract shopping list
- Zest of 1 lemon shopping list
- 2/3 cup raspberry preserves shopping list
- GLAZE: shopping list
- 1/2 cup powdered sugar shopping list
- 1 tablespoon lemon juice shopping list
- Zest of 1 lemon shopping list
How to make it
- Preheat oven to 375 degrees F..
- Line a baking sheet with parchment paper or Silpat.
- Combine flour, baking powder and salt in a bowl using food processor.
- Add butter and pulse until mixture resembles pebbles OR use a pastry blender OR you hands.
- Pulse in sugar.
- Add half and half, vanilla extract and lemon zest.
- Pulse until dough just comes together.
- Don't overmix.
- If batter is too dry, add half and half a little at a time.
- Turn dough onto floured parchment and divide into two pieces.
- Roll one piece to 1/2" thick 9x9" (roughly) square.
- Keep dough from sticking by sprinkling with flour, if necessary.
- Slather the slab of dough with the jam and fold the left side toward the center using parchment as an aid.
- Fold other side in using the same technique.
- Slide onto prepared pan.
- Repeat with other dough ball.
- Both scones will fit on the same baking sheet, with a few inches between.
- Brush with a bit of cream (optional).
- Bake for about 25 minutes OR until golden on the bottoms.
- Prepare glaze, if using:
- Combine powdered sugar, lemon juice and lemon zest in small bowl.
- When scones come out of the oven brush them generously with the glaze and let cool.
- Slice into pieces as big or as small as you like.
