Tamale Skillet Supper

- 1lb. ground beef chuck shopping list
- 1/2c chopped onion shopping list
- 1/2c chopped green bell peper shopping list
- 1(15oz) can kidney beans,draine1(141/2oz) can mexican - style stewed tomatoes shopping list
- cooking spray shopping list
- 1(16 oz) tube prepared polenta,cut in 1/4" thick slices shopping list
- 4oz. grated cheddar cheese shopping list
- chopped fresh cilantro or parsley shopping list
How to make it
- In lg. skillet over med-high heat,combine ground beef,onion,green pepper,cook till beef is browned,about 5 mins,breaking up with spoon. Drain well. Stir in beans and tomatoes and cook,stirring occasionally,until mixture is thickened,abou 10 mins longer.
- Preeat oven to 375.Coat 11/2qt. baking dish with cooking spray. Line bottom and sides of dish with some polenta slices,leaving enough to cover top. Spoon in beef mixture,then sprinkle with cheese. Top with remaining polenta slices.
- Bake 25 mins or till lightly browned and bubbly. Let stand 10 mins beforeserving. Sprinkle with cilantro or parsley ,if desired.
