Bacon Lettuce Tomato Salad With Goat Cheese Dressing Recipe
The is a revision of the classic BLT sandwich without the bread. The dressing will work on many salads, it has a great tang and taste. Mrs. Bojangles loves this salad.

Ingredients
  • 2 hearts of Romaine lettuce cleaned, dried, and broken into bite size pieces
  • 1 pint grape tomatoes cut in half
  • 4 rashers of bacon, cit into 1/4" strips and fried until crisp, drain
  • 4 oz Chevre goat cheese (I use plain but herbed would be good too)
  • 1/4 c + 1T skim milk (any milk including buttermilk will work)
  • 1 T + 1 teas white wine vinegar
  • 1/2 teas freshly ground black pepper
  • Kosher salt to taste

Directions
  1. Bring the cheese to room temperature
  2. Whisk the Chevre and milk together until smooth
  3. Whisk in the vinegar
  4. Add the pepper and whisk
  5. Add salt to taste
  6. Toss the lettuce and tomatoes together with the dressing just before serving. Top with the bacon bits.
  7. You can experiment with herbs and honey. Add a T of honey the dressing and use raspberries or strawberries instead of the tomatoes. The sweet of the fruit and tang of the dressing are great together.
