Ingredients

How to make it

  • Heat olive oil in medium size pan.
  • Add veggies, garlic, and salt and saute until soft.
  • While veggies are cooling a little, mix together eggs, ricotta, and parmesan until fully combined.
  • Stir veggies into egg mixture and pour into pie plate.
  • Cook at 350 for 25-30 minutes.
  • Enjoy!
  • *Also great topped with fresh tomato slices
