Crustless Garden Veggie Quiche

- 1 tablespoon olive oil shopping list
- 1 cup sliced mushrooms shopping list
- 1/2 med. zucchini, halved lengthwise and sliced shopping list
- 1/2 small onion, diced shopping list
- 1/4 cup red bell pepper, diced shopping list
- 1/3 cup shredded carrots shopping list
- 2 cloves garlic, crushed shopping list
- 1 teaspoon salt shopping list
- 5 eggs shopping list
- 1/2 cup ricotta cheese shopping list
- 1/3 cup parmesan cheese shopping list
- 1/3 cup grated parmesan cheese shopping list
How to make it
- Heat olive oil in medium size pan.
- Add veggies, garlic, and salt and saute until soft.
- While veggies are cooling a little, mix together eggs, ricotta, and parmesan until fully combined.
- Stir veggies into egg mixture and pour into pie plate.
- Cook at 350 for 25-30 minutes.
- Enjoy!
- *Also great topped with fresh tomato slices
