Ingredients
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1 pound Greek (or other) pork sausage in 1/2" rings
  • 2 onions, diced
  • 4 tomatoes, diced OR 32 ounces canned crushed tomatoes
  • 1 small head cabbage, chopped
  • 2 carrots, peeled and chopped
  • 2 cans chicken broth
  • 1 pound Greek gigantes lima beans (soak overnight and boil about 40 minutes) OR canned or frozen bean of your choice
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper
  • 1 cup Kalamata olives, pitted and sliced

Directions
  1. Melt the butter and add oil in a Dutch oven.
  2. Saute sausage until it browns, about 3 minutes.
  3. Remove sausage and set aside.
  4. Add onion and brown about 3 minutes.
  5. Add tomatoes, cabbage, carrots and broth.
  6. Cook over medium heat about 15 minutes until a stewlike consistency is achieved.
  7. Add beans and sausage, pepper and red pepper.
  8. Simmer 15 minutes, uncovered.
  9. If it gets too thick add a little water.
  10. Add olives on top before serving.
