Pecan Pie Brownies Recipe
Haven't tried this yet, but I'm so intrigued by it, that I'm sure it won't be long before I'm putting it together. Says it yields 40 brownies, but I have my serious doubts! Courtesy of Southern Living...

Ingredients
  • 1 (2-pound) frozen pecan pie, thawed completely
  • 1/2 cup butter
  • 1 -3/4 cups (11.5 oz package) semi-sweet chocolate chunks
  • 1 cup sugar
  • 2 large eggs
  • 1 cup milk
  • 1-1/2 cups AP flour
  • 1 teaspoon baking powder

Directions
  1. Cut pecan pie into cubes, set aside.
  2. Microwave 1/2 cup butter and chocolate chunks in a glass bowl at High 1 min.
  3. Stir and microwave 1 more minute.
  4. Stir until mixture is smooth.
  5. Beat chocolate mixture, sugar, eggs, milk, and half of pie cubes at low speed with a heavy-duty stand mixer until blended.
  6. Add flour and baking powder, stirring with a wooden spoon until blended.
  7. Stir remaining half of pie cubes into batter. Batter will be thick.
  8. Spoon batter into a 13x9 pan coated with cooking spray.
  9. Bake at 350 degrees for 50 minutes.
  10. Cool brownies completely on a wire rack.
  11. Cut into triangles or squares.
  12. The Southern Living kitchen used a Mrs. Edwards Pecan Pie for testing purposes.
