Tomato Chutney Recipe
A lovely spicy thick tomato sauce which goes great with stewed meat, potatoes, vegetables or just as a spread on a sandwich.

Ingredients
  • 1 kg ripe tomatoes chopped
  • 1 big sour apple, peeled and chopped.
  • 2 big onions chopped.
  • 3 cloves garlic chopped.
  • 1 tbs ginger shredded.
  • 2 red peppers chopped, ( with or without seeds = your choice).
  • 2 bay leaves.
  • 2 ts worcestershire sauce.
  • 2 tbs balsamic vinegar.
  • 200 ml apple vinegar.
  • 150 gr soft brown sugar.
  • 1 ts salt.

Directions
  1. Put everything in a thick baking pan, bring on high heat to a boil and
  2. turn heat back to the lowest, now simmer uncovered for 60 min, till thickened, like marmelade.
  3. Put in sterilized jars and store at least 4 weeks in a dark cool place to let the different tastes combine.
