Tandoori Chicken Recipe
Tender flavorsome classic dish, If you can marinade the chicken for 24hrs for best results

Ingredients
  • 8 chicken pieces, skins removed
  • groundnut oil for brushing
  • 60g - 2oz butter
  • 1 red onion thinly sliced to serve
  • lemon wedges to serve
  • FOR THE MARINADE
  • 1 onion chopped
  • 2 large garlic cloves
  • 1cm - 1/2 inch piece fresh ginger
  • 3 tbsp lemon juice
  • pinch of salt
  • 1 1/2 tsp chilli powder, or to taste
  • 1 tsp garam masala
  • pinch of turmeric
  • pinch of saffron powder

Directions
  1. Use a fork to prick the chicken, place in a non metallic bowl
  2. TO MAKE THE MARINADE
  3. blend the onion, garlic and ginger to a paste
  4. add the lemon juice, salt and spices and process again
  5. pour over the chicken and marinade for at least 3 hours (I use Tupperware so I can shake it up at any time)
  6. preheat oven to 220C - gas 7
  7. put a wire wrack on top of a sheet of foil - shiny side up - in a roasting pan and place chicken onto it
  8. brush chicken with melted butter
  9. roast for 20 - 25 min or till juices run clear
  10. brush chicken again with groundnut oil and pop under a hot grill
  11. grill for 5 -10 min or until the edges are lightly charred
  12. serve with the onions slices and lemon wedges
