Tandoori Chicken

- 8 chicken pieces, skins removed shopping list
- groundnut oil for brushing shopping list
- 60g - 2oz butter shopping list
- 1 red onion thinly sliced to serve shopping list
- lemon wedges to serve shopping list
- FOR THE marinade shopping list
- 1 onion chopped shopping list
- 2 large garlic cloves shopping list
- 1cm - 1/2 inch piece fresh ginger shopping list
- 3 tbsp lemon juice shopping list
- pinch of salt shopping list
- 1 1/2 tsp chilli powder, or to taste shopping list
- 1 tsp garam masala shopping list
- pinch of turmeric shopping list
- pinch of saffron powder shopping list
How to make it
- Use a fork to prick the chicken, place in a non metallic bowl
- TO MAKE THE MARINADE
- blend the onion, garlic and ginger to a paste
- add the lemon juice, salt and spices and process again
- pour over the chicken and marinade for at least 3 hours (I use Tupperware so I can shake it up at any time)
- preheat oven to 220C - gas 7
- put a wire wrack on top of a sheet of foil - shiny side up - in a roasting pan and place chicken onto it
- brush chicken with melted butter
- roast for 20 - 25 min or till juices run clear
- brush chicken again with groundnut oil and pop under a hot grill
- grill for 5 -10 min or until the edges are lightly charred
- serve with the onions slices and lemon wedges
