How to make it

  • Use a fork to prick the chicken, place in a non metallic bowl
  • TO MAKE THE MARINADE
  • blend the onion, garlic and ginger to a paste
  • add the lemon juice, salt and spices and process again
  • pour over the chicken and marinade for at least 3 hours (I use Tupperware so I can shake it up at any time)
  • preheat oven to 220C - gas 7
  • put a wire wrack on top of a sheet of foil - shiny side up - in a roasting pan and place chicken onto it
  • brush chicken with melted butter
  • roast for 20 - 25 min or till juices run clear
  • brush chicken again with groundnut oil and pop under a hot grill
  • grill for 5 -10 min or until the edges are lightly charred
  • serve with the onions slices and lemon wedges
