Ingredients
  • 1 lb boneless pork
  • 1 Tblspn olive oil
  • 1/2 an onion - diced
  • 2 cups sliced fresh mushrooms
  • 2 cloves garlic - minced
  • 1/4 tsp salt
  • Pinch of pepper
  • 1/2 cup sour cream
  • 1/4 cup chicken stock
  • 1 tsp lemon juice
  • 1 Tblspn chopped fresh parsley

Directions
  1. Cur pork crosswise into thin strips.
  2. In a large non-stick skillet, heat oil over med-high heat
  3. Stir-fry pork in batches, until browned but still slightly pink inside, about 2 - 3 mins.
  4. With slotted spoon, transfer to plate.
  5. Add onion, mushrooms, garlic, salt & pepper & cook over medium heat until no liquid remains, about 10 mins.
  6. Return pork to skillet. Stir in sour cream & stock
  7. Cook, without boiling, until hot, 1 min. Stir in lemon juice
  8. Sprinkle with parsley
