Swiss Pork n Mushrooms

- 1 lb boneless pork shopping list
- 1 Tblspn olive oil shopping list
- 1/2 an onion - diced shopping list
- 2 cups sliced fresh mushrooms shopping list
- 2 cloves garlic - minced shopping list
- 1/4 tsp salt shopping list
- Pinch of pepper shopping list
- 1/2 cup sour cream shopping list
- 1/4 cup chicken stock shopping list
- 1 tsp lemon juice shopping list
- 1 Tblspn chopped fresh parsley shopping list
How to make it
- Cur pork crosswise into thin strips.
- In a large non-stick skillet, heat oil over med-high heat
- Stir-fry pork in batches, until browned but still slightly pink inside, about 2 - 3 mins.
- With slotted spoon, transfer to plate.
- Add onion, mushrooms, garlic, salt & pepper & cook over medium heat until no liquid remains, about 10 mins.
- Return pork to skillet. Stir in sour cream & stock
- Cook, without boiling, until hot, 1 min. Stir in lemon juice
- Sprinkle with parsley
