How to make it

  • Cur pork crosswise into thin strips.
  • In a large non-stick skillet, heat oil over med-high heat
  • Stir-fry pork in batches, until browned but still slightly pink inside, about 2 - 3 mins.
  • With slotted spoon, transfer to plate.
  • Add onion, mushrooms, garlic, salt & pepper & cook over medium heat until no liquid remains, about 10 mins.
  • Return pork to skillet. Stir in sour cream & stock
  • Cook, without boiling, until hot, 1 min. Stir in lemon juice
  • Sprinkle with parsley
