I had to try these because I had never heard of them or had them. They were surprisingly good! I liked the fact that they weren't sweet. I put a fried egg on top. I also like the fact this recipe was really easy to cut in half, which is something I always look for. I would have had five cakes, but I ruined the first one. :) I took some pictures and will post them, if you like. Thanks!

I made this tonight for dinner instead of for breakfast! I made it as written...it took almost 4 cups of milk to get the batter to a pourable consistancy. I added 3 tbls. of honey to the batter. I didn't have a cast iron pan so I used a regular non-stick pan. I had to add a tiny bit of butter to the pan for each corn cake or they stuck to the pan. This is a very dense batter so it took twice a long to cook as it would for a pancake. I tried these corn cakes with syrup but I didn't like them that way, so I tried it with a fried egg on top, sprinkled with bacon salt and chopped green onions. It was sooo much better this way!!! I added my photo!
